Coconut and Dulce de Leche Bites

These coconut and dulce de leche bites are incredibly easy to make and require only a few ingredients.

They have a soft, moist texture with a rich dulce de leche flavor, while the shredded coconut coating adds a pleasant contrast.

Ingredients

  • 2 3/4 cups shredded coconut
  • 1 cup dulce de leche, preferably thick or pastry-style
  • 1 tsp vanilla extract
  • 1 cup shredded coconut, for coating

Preparation

  1. Place the 2 3/4 cups of shredded coconut in a large mixing bowl. Add the dulce de leche and vanilla extract.
  2. Mix with a spatula or spoon until everything is well combined. The mixture should be thick, moist, and firm enough to shape with your hands.
  3. If the mixture feels too soft, add a little more shredded coconut, 1 tablespoon at a time. Avoid adding too much at once so the bites do not become dry.
  4. Refrigerate the mixture for 20 to 30 minutes. Chilling helps it firm up and makes the bites much easier to shape.
  5. Place the extra shredded coconut in a shallow bowl or plate. Remove the mixture from the refrigerator and scoop out small portions.
  6. Roll each portion between your hands to form small balls of similar size, pressing them gently so they hold their shape.
  7. Roll each bite in the shredded coconut until completely coated. Arrange them on a plate or tray without stacking them.
  8. Refrigerate again for at least 30 minutes before serving so they can finish setting.

Tips and Advice

  • Use a thick dulce de leche whenever possible. It makes the mixture easier to shape and helps the bites hold together better.
  • If the mixture is too soft, add shredded coconut gradually until it becomes easy to handle.
  • If it sticks to your hands, lightly dampen your palms with cold water before rolling the balls.
  • Keep the bites fairly small so they hold their shape well and do not feel overly rich.
  • For a different flavor, add a small amount of finely grated orange or lemon zest.
  • Do not skip the chilling time. The mixture will be much softer and harder to shape if you try to roll it immediately.
  • Store the finished bites in an airtight container in the refrigerator for several days.
  • You can prepare them a day ahead and keep them chilled until ready to serve.

With just a few simple ingredients and no baking required, these bites come together quickly and keep their soft texture beautifully after chilling.
