Carbonara Sauce Recipe

Carbonara sauce is one of the most delicious Italian sauces known for its rich and creamy flavor.

This is the case with Carbonara, a delicious sauce made with olive oil, eggs, and cheese that is known for its smooth and velvety texture. Originally, Carbonara was a typical dish from the Lazio and Rome regions. Over time, its preparation spread throughout the entire Italian Republic.

Carbonara Sauce Recipe

Ingredients:

  • 250 grams of spaghetti (or pasta of your choice).
  • 3 eggs.
  • 150 grams of Parmesan cheese.
  • Extra virgin olive oil.
  • Salt.
  • Pepper.
  • 1/5 kilo of bacon or smoked pancetta.
  • 3 liters of water. It is also recommended to have the following handy:
  • Skillet with handle.
  • Pot.
  • Deep plate.

How to Make Traditional Carbonara Sauce

  1. First, heat the olive oil in a skillet.
  2. Next, cut the pancetta into small cubes.
  3. Add the pancetta cubes to the hot olive oil and sauté them for a few minutes until they become crispy. It’s best to cook the pancetta to a medium point, not too crispy as it may become dry, and not too raw as it may cause stomach problems.
  4. While the pancetta is browning, bring 3 liters of water to a boil in a pot. Add salt and the pasta, and let it boil until the spaghetti is al dente.
  5. While the spaghetti is boiling, crack the 3 eggs into a plate, season them with salt and ground pepper to taste, and beat them. Add the grated Parmesan cheese to the beaten eggs and mix well until it forms a thick paste, which will be your sauce.
  6. Once the spaghetti is cooked, drain it but keep some of the cooking water. Transfer the spaghetti to the skillet with the pancetta, without draining it too much, as the remaining water will help create a creamy texture for the Carbonara.
  7. Add the prepared sauce to the skillet with the spaghetti and pancetta, and mix everything together until well combined.
  8. If you want a creamier Carbonara, add a tablespoon of the reserved cooking water and stir until it reaches the desired consistency.
  9. After following these steps, you can enjoy a homemade Carbonara with a delicious flavor. Remember to eat it shortly after preparing it to savor its best taste.

After tasting a freshly made Carbonara, no other pasta will compare. Don’t hesitate any longer and cook your own Carbonara at home! If you follow our recipe precisely, you’ll create a delicious dish.
